The Jungle Bird is a late‑1970s tiki cocktail credited to the Aviary Bar at the Kuala Lumpur Hilton (circa 1978). It stands out from classic tiki drinks by introducing a pronounced bitter element alongside tropical fruit, helping revive interest in tiki-style cocktails in modern craft bars.

Overall: a balanced, slightly edgy tiki drink — tropical and juicy up front, with a firm bitter backbone and a warm, molasses finish. The fresh pineapple and a tart lime lift give a lively tropical fruitiness and acidity. Luxardo Bitter Rosso brings herbal, bitter‑sweet, and slightly botanical notes that cut the sweetness and add complexity (think Campari/Cynar family but darker and richer). Denizen vatted dark rum supplies dark sugar, molasses, light spice and a rounded rum character; demerara syrup deepens the caramel/treacle sweetness and adds weight without cloying.

Ingredients

1 1/2 oz Denizen Vattd Dark Rum
3/4 oz Luxardo Bitter Rosso
1 1/2 oz pineapple juice
1/2 oz freshly squeezed lime juice
1/2 oz demerara syrup

Directions

Add the Denizen rum, Bitter Rosse, pineapple juice, lime juice, and demerara syrup into a shaker with ice and shake until well-chilled. Strain into a rocks glass over fresh ice. Garnish with a pineapple wedge.
