The Irish Exit
Dingle’s take on The Last Word honors the cocktail’s century-old story while putting a local twist on its signature balance. First devised around 1915 at the Detroit Athletic Club and revived by Seattle bartender Murray Stenson in 2003, the original — equal parts gin, Luxardo Maraschino, green Chartreuse, and fresh lime juice — became an instant classic for its vivid color and sharp, layered flavor. Dingle’s version swaps in Dingle Gin and Luxardo Del Santo (in place of the green Chartreuse), keeping the equal-parts structure and bright lime for a familiar yet distinctly Dingle interpretation of this enduring craft-cocktail staple.
